These flower cookies are gluten-free and lactose-free, light and crumbly. Perfect for breakfast, suitable for both celiacs and those who are lactose intolerant.
Wheat flour can be replaced with rice, almond, corn, and chestnut flour, as they are all naturally gluten-free.
Being celiac does not mean giving up sweets, in fact, many recipes can be made with gluten-free flours, such as the one with Schär or Biaglut.

Ingredients for Gluten-Free Flower Cookies

  • 2 1/2 cups rice flour
  • 1 egg
  • 2 egg yolks
  • 7 tbsps lactose-free butter
  • 1/2 cup sugar
  • 1 lemon zest (grated)

Preparation of Flower Cookies

  • Start by putting all the ingredients in the bowl of the stand mixer, mix at medium speed with the ‘leaf’ beater.

    When well combined, form a dough ball, let it rest in the fridge for at least an hour, covered with cling film

    After the resting time, roll out the shortcrust pastry on a floured silicone mat and create cookies using a flower cookie cutter and bake at 350°F for about 10-12 minutes.

    Once baked, let cool and sprinkle with gluten-free icing sugar.
