Calzone with Cotechino and Lentils
A very simple recipe to bring to the table for the most important dinner of the year: New Year’s Eve! As tradition dictates, cotechino and lentils cannot be missing from the table, but this year let’s surprise our guests with a modern version, very easy to prepare and delightful to serve. A calzone made with puff pastry and filled with lentils and cotechino, a delight! Of course, you can also use zampone, it works just as well!

Ingredients for the Calzone with Cotechino and Lentils:
- 1 sheet puff pastry (Round)
- bay leaf
- 1/4 cup lentils
- 1 carrot
- 1 celery
- 1 onion
- milk
- bouillon cube
- parmesan
- mozzarella
- 1/4 cup tomato sauce
- poppy seeds (Or others)
Steps
The preparation of the Calzone with Cotechino and Lentils is very simple, watch the video HERE.
In a saucepan, place the lentils, water, celery, onion, and carrot, and start cooking. Stir occasionally.
Check the cooking times on the back of your package. Towards the end, add the vegetable bouillon cube, tomato sauce, and a few bay leaves. Drain and place them in the blender
Blend and let cool.
Unroll the pastry and place the resulting mix on top,
add a bit of shredded mozzarella on top, some parmesan, the pre-cooked cotechino without the skin, and seal the edges well.
Brush with a bit of milk and sprinkle poppy seeds on top. Bake at 356°F for about 30 minutes.
