Ingredients

  • 13 oz ground beef (or mixed)
  • 1/4 cup stale bread (crumbled)
  • 1 egg
  • 1/3 cup grated Parmesan
  • 1 sprig parsley
  • 1/2 clove garlic

  • 1/2 cup pizza mozzarella (or scamorza)
  • to taste extra virgin olive oil

  • 1 Bowl
  • 1 Grater
  • 1 Baking Tray
  • 1 Chopper
  • 1 Pastry Cutter
  • Parchment Paper

Steps

HOW TO MAKE MINI MEAT PIZZAS

  • First, place the ground beef in a large bowl. Mince the stale bread using a manual chopper, then add it to the meat along with the grated Parmesan, parsley, and peeled and minced garlic. Season with salt and pepper.

  • Finally, add the egg, season with salt and pepper, and mix well with a fork (or with your hands) until you obtain a homogeneous mixture.

  • Preheat the oven to 392°F, using a fan setting.

    Take the mixture, weigh it and divide it into 9 balls (or 10 depending on how thick you want them), then flatten each ball to form circular mini pizzas of uniform thickness. I used a pastry cutter with a diameter of 2.75 inches, so they all turned out the same, but it’s not essential: it can be done by hand as well.

  • As you prepare them, place them on a baking tray lined with parchment paper, pour about a tablespoon of tomato sauce on each mini pizza, drizzle with a little extra virgin olive oil and a sprinkle of oregano, and bake for about 15 minutes.

  • After the time has passed, take them out of the oven and add the chopped mozzarella, and bake for another 4 – 5 minutes or until the cheese has melted.

– Cheese: I used pizza mozzarella as it’s drier and works well for the recipe, even though it has less flavor. If you prefer, you can use classic mozzarella, but be sure to squeeze it well before putting it on the mini pizzas. Alternatively, you can replace it with scamorza cheese.
