Ingredients for Meringues with the Thermomix

  • 330 g sugar
  • 110 g egg whites
  • 1 pinch salt

Preparing Meringues with the Thermomix

  • Put the sugar in the bowl and turn on the Thermomix for 10 seconds/ Turbo speed.

    Insert the butterfly whisk and add the egg whites with a pinch of salt 7 minutes /98°F /speed 2.

    Then let it cool with the lid open for about 10 minutes then turn it on for 7 minutes/ speed 2.

    Transfer the mixture to a piping bag with a star nozzle and create the meringues on a baking sheet lined with parchment paper. I need to be careful to space them apart because they will increase in volume.

    Finally, bake in the oven for about 90 minutes at 194°F.

    Once cooked, let them cool in the oven with the door half-open so that they dry well inside.
