Marinated Grilled Peppers

The marinated grilled peppers are a cheap, tasty, and very simple dish that we can use as a fully vegetarian side dish, or as an appetizer perhaps using them as a filling for toasted crostini!

The peppers are along with eggplants and tomatoes, the summer star vegetables, and we can prepare many delicious and easy recipes.

The marination is essential, I dare say basic, but we can also add a pinch of chili, other aromatic herbs like finely chopped parsley, or even tiny capers, and we’ll get a dish that’s still economical and so tasty!

Ingredients: MARINATED GRILLED PEPPERS

  • 8 peppers (yellow and red for me)
  • 3 cloves garlic
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste basil

PREPARATION FOR MARINATED GRILLED PEPPERS

  • I place the wash peppers on a baking sheet lined with parchment paper and cook them at 356°F until the skin is blackened, they are flattened on the baking sheet, and well cooked.

    I let them cool for a few hours.

  • Once cold, I remove the skin, internal seeds, and filaments, then slice each flap into strips of 0.4 to 0.6 inches.

  • In a wok, I heat extra virgin olive oil with garlic.

    I then add the grilled pepper strips, season with salt and pepper, and let this tasty side dish of red and yellow peppers flavor for a few minutes.

  • I place the grilled peppers in a terrine with the garlic cloves and part of the warm seasoning, adjusting the taste.

    I cover with plastic wrap and refrigerate until mealtime.

    Simple, tasty, economical dish… and at the time of serving, I add EVO oil and some fresh basil leaves torn up.
