Fusilli with Arugula, Speck, and Cherry Tomatoes is also delicious served as a cold pasta salad. In this case, I recommend having the speck sliced thinly.

That way, it won’t become chewy, and you can sprinkle it on the pasta, cooking it at the last moment so it remains crispy.

A variation on this recipe could be to replace the garlic with red onion for a sweeter flavor, and consequently, sprinkle the pasta with grated parmesan.

The taste will be sweeter and perhaps even more delicate, but the result will still be excellent.
