The no-bake fruit tartlets are made with a base of crumbled dry cookies and filled with custard and fresh seasonal fruit. They are prepared in very little time and are delicious. This cookie base does not require baking but just a half-hour in the freezer to mold them perfectly. For the filling, I chose custard but if you don’t feel like cooking, you can also opt for a mascarpone cream or simply whipped cream. This dessert can also be made gluten-free and lactose-free.

Ingredients

  • 10.5 oz dry cookies
  • 5.3 oz butter
  • 1 cup milk
  • 3 egg yolks
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp rice starch
  • 1/2 vanilla pod
  • 6 strawberries
  • 1 kiwi
  • pistachio crumbs
  • spray gelatin

Steps

  • Open the vanilla pod and remove the seeds, heat the milk with the vanilla pod. Mix the vanilla seeds with the eggs and sugar and whisk. Add the starches and blend well. Pour the hot milk into the cream, mix with a whisk, cook while stirring. Place the cream in a low and wide container. Cover with contact film. Cool quickly and transfer to the fridge for a few hours.

  • Put the cookies in a food processor or blender and mix until finely ground. Add the melted butter and blend again to combine. Take a tablespoon of the mixture and place it in silicone molds. Continue the same way until the mixture is finished. Transfer to the freezer for 30 minutes.

  • Unmold the tartlets and place them on a serving plate. Put the custard in a piping bag with a star nozzle. Fill the tartlets with the cream, place half a strawberry and half a kiwi slice on top of each. Decorate with pistachio crumbs and spray gelatin.

  • Can I make the no-bake fruit tartlets lactose-free and gluten-free?

    Yes, you can use lactose-free or completely plant-based products in the same quantities as indicated in the recipe. I recommend lactose-free custard (recipe), richer in egg yolks. For gluten-free, ensure the ingredients are allowed as per the Italian Celiac Association manual.
