Ingredients for the Quilted Tart with Apples and Cream

  • 1.1 lbs shortcrust pastry (with extra virgin olive oil)
  • 2 Granny Smith apples (or Golden Delicious)
  • 3.5 tbsp butter
  • 1/4 cup granulated sugar
  • 1 1/4 cups milk
  • 2 egg yolks
  • 1/3 cup sugar
  • 1/4 cup cornstarch
  • 1 tsp lemon zest (grated)

  • 1 Tart pan 8.7 inches in diameter
  • 1 Rolling pin
  • 1 Kitchen scale

Preparation of Quilted Tart with Apples and Cream

  • To prepare the Quilted Tart with Apples and Cream, first prepare the shortcrust pastry, wrap it in plastic wrap, and let it rest in the refrigerator for at least 30 minutes.

  • Meanwhile, dice the apples and caramelize them in a skillet with butter and sugar.

    It will take 10 minutes, set aside to cool.

  • Heat the milk until it almost boils, then in a small pot, whisk together egg yolks, sugar, and cornstarch, eliminating lumps.

    Pour in the hot milk and bring to the stovetop.

  • Continuously stir to thicken the pastry cream; it will take around 6/7 minutes. Add lemon zest and stir to incorporate.

    Remove from heat, cover with plastic wrap, and let cool.

  • At this point, roll out the shortcrust pastry using a rolling pin, dusting the work surface with a little flour.

  • Butter and flour a tart pan 8.7 inches in diameter and line it with the pastry, ensuring it adheres well to the bottom and sides.

  • Pour in the caramelized apples set aside, place the pastry cream inside a pastry bag, and make crossed lines over the apples.

  • Bake in a preheated static oven at 350°F, on the middle rack for 25/30 minutes. You can decorate the tart with sliced almonds.

  • Roll out the pastry on the work surface and place it on the CRISPY plate.

  • Peel the apples, dice them, with melted butter and sugar, and fill the tart.
    Bake in the microwave with CRISPY function for about 7-9 minutes.

  • Always refer to your microwave instructions.

  • Remove the tart from the microwave, pour the pastry cream on top, with the pastry bag, and put it back in the microwave for another 3 minutes, always with CRISPY function.

  • Let it cool slightly before serving.

    Dust with powdered sugar if desired.
