Ingredients for the Cauliflower and Sausage Quiche with Shortcrust Pastry
With these amounts, you can make a savory pie with only the shortcrust pastry base; if you want it with a cover, double the amounts.
- 2 1/2 cups all-purpose flour
- 5.3 oz cold butter (cut into cubes)
- 1 pinch salt
- as needed cold water
- 1 teaspoon ground turmeric
- Half teaspoon thyme
- 1 sprig rosemary
- as needed marjoram
- 1 cauliflower (medium-sized)
- 10.6 oz sausages
- 5.3 oz mozzarella
- 2 large eggs

Preparation of Cauliflower and Sausage Quiche
First, prepare the shortcrust pastry, so in a large bowl, combine the flour, salt, herbs, and turmeric.
Add the cold butter cut into cubes, working the dough with your hands until you get a mixture resembling wet sand.
At this point, add the cold water a little at a time, continuing to knead until you form a smooth ball.
Wrap the dough in plastic wrap and place it in the fridge to rest for at least half an hour.
The longer it rests, the better.
In the meantime, cut the cauliflower into florets; in a pot of boiling water, blanch the cauliflower for 5 to 8 minutes, or you can steam it for 3 minutes.
Let it cool.
Meanwhile, remove the casing from the sausages and break them coarsely, set aside.
When the shortcrust pastry is ready, roll it out with the rolling pin on a floured surface and use it to line a 9.5-inch round pan.
Prick the base with a fork and fill it with cauliflower, sausages, and the eggs beaten with a pinch of salt.
