Panettone Nutellotti
Surely you have already started having leftover panettone or pandoro and don’t know what to do with it. Clearly, food is very precious and should not be wasted, so try making this little recipe with the panettone or pandoro! I called them nutellotti because I was inspired by my Nutellotti cookies without eggs, and I must say they turned out to be delightful treats. I chose to cover some with coconut and Nutella and others with hazelnut granules and lemon jam, but you can obviously customize them to your taste!
Also try these desserts made with leftover panettone or pandoro:

- Seasonality: Christmas, Epiphany
Ingredients for the panettone nutellotti:
- 10 1/2 oz panettone
- 2 1/2 tbsps unsweetened cocoa powder
- 2/3 cup mascarpone
- 2/3 cup jam (To taste)
- coconut
- rum flavoring
- hazelnut granules
- Nutella®
Steps
Making panettone nutellotti is very simple and quick, watch the video HERE.
First, finely chop the leftover panettone or pandoro. Add the jam, mascarpone, rum flavoring, cocoa, and mix until you get a soft and homogeneous mixture. Take a bit of the mixture and shape it into a ball with your hands. Roll it in desiccated coconut and then press it in the center with your finger. Continue like this with all of them. Some balls can be rolled in hazelnut granules instead of coconut, or alternatively, you can also use pistachio granules. In the center (where we made space with the finger), using a piping bag, put a little bit of Nutella or jam to taste.
