Zucchini Sticks with Bacon

Zucchini sticks with bacon in an air fryer. They are too good, a simple, tasty, and easy side dish to prepare. My guests really appreciated them.

I cooked them in an air fryer, but they can also be baked in the oven.

Crispy in the air fryer, a recipe with a coating that doesn’t come off, ready in 10 minutes and perfect even as an appetizer.

The ingredients for this breading recipe are simple: cornmeal, Parmesan, no salt because the Parmesan already adds saltiness and contributes to the golden crust.

In general, I cook them in an air fryer, but they can also be baked in an electric oven to make them golden.

Ingredients for Zucchini Sticks with Bacon

  • 4 zucchinis
  • 1/4 cup cornmeal (or breadcrumbs)
  • 1/4 cup semolina
  • 1/2 cup Parmesan cheese (grated)
  • to taste garlic powder (optional)
  • dried oregano (to taste)
  • as needed extra virgin olive oil
  • 120 g bacon (sliced)

Steps for Zucchini Sticks with Bacon

  • First, wash and trim the zucchinis, then slice them lengthwise about 1/4 inch thick; you can use a mandoline to help. Then cut the slices in half, then into sticks, to get rectangles approximately 2-2.5 inches by 0.5 inches, 1/4 inch thick.

  • Transfer them into a large container, add plenty of extra virgin olive oil, and mix so that the zucchinis are completely covered.
    In another container, mix the cornmeal, semolina, grated cheese, garlic powder, chopped parsley, and dried oregano.

    Then transfer the prepared mix into the bowl with the zucchinis and mix well.

  • Place them in the fryer basket lined with parchment paper and cook at 365°F for about 6/7 min.

    Take them out, let them cool slightly, and wrap a bit of bacon around each one.

    Put them back in the basket and cook at 365°F for another 6 min or so.

    Obviously, check them.

    (If you don’t have an air fryer, the baking time in a fan oven changes to 15 minutes and then another 15 minutes).

Tips and Tricks

To get crispy zucchinis, it’s important to choose the right vegetables, which should preferably be tender and small.

In this case, zucchinis are less watery and are more suitable for this type of recipe.

They will become super crispy in just a few minutes.

You can store zucchini sticks for 2-3 days in the fridge, reheating them as needed in the oven, microwave, or air fryer.

Do not freeze.
