Fresh herbs also work well, and if you don’t like sage and rosemary, feel free to use whatever you want, because the result will always be excellent. So a quick recipe, which can be prepared even at the last minute, or even a few days in advance, because bacon seasoned this way will keep perfectly in the refrigerator. Finally decide the cooking method depending on the season, because you can eat these skewers really all year round.

- 4 slices fresh bacon about 0.4 inches thick

- 7 oz breadcrumbs
- 1 bunch sage
- 1 large sprig rosemary
- Half lemon, grated zest to taste

How to Prepare Breaded Fresh Bacon Skewers
To prepare Breaded Fresh Bacon Skewers, organize your workspace with all the ingredients already measured so that everything is at your fingertips.
In a deep but roomy dish, pour in the breadcrumbs and add a pinch of salt.
On a cutting board, chop the sage leaves with the rosemary using a knife, or you can also use a food processor.
Once you have finely chopped them, pour them over the breadcrumbs and mix everything.
With the help of a pair of scissors, remove the rind from the bacon and cut the slices in half, making the preparation easier and more practical.
Place the bacon slices on a surface, even a cutting board is fine, and with a teaspoon, spread a bit of mustard on one side.
Immediately pass that side into the herb-flavored breadcrumbs, turn the slice to the other side, and repeat the same operation.
Finally, the slices should be well breaded on both sides.
At this point, all that’s left is to skewer them and place them inside a baking sheet, previously lined with parchment paper.
Bake in a preheated oven at 392°F, fan mode, and let them cook for about half an hour, turning the skewers at least once.
Before turning off the oven, check that they are well browned, because only that way you will get crispy slices.

Tips and Variations
Preheating the oven before cooking the meat is really important because this way you avoid the stewing effect, which is the loss of liquids that would harden the food.

You can also do it cooked, but surely when you reheat them, they will lose their crispiness.
