Gluten-free fried donuts are soft and light, made with two mixes and potato flakes. They require a bit of patience for rising, but the result is worth it. They can also be enjoyed the next day by warming them slightly in the microwave.

Ingredients
- 2 cups flour (Nutrifree bread mix)
- 2 cups flour (Schar mix b)
- 2 eggs
- 1/3 cup sugar
- 3.5 tbsp sunflower seed oil (or butter)
- 1.1 oz potato flakes
- 1.5 cups water
- 1 tsp salt
- 1 lemon (zest)
- 1 vanilla bean
- 1 tsp dry yeast
- 1 quart peanut oil
- 2 tbsp sunflower seed oil
- 1/4 cup granulated sugar

Steps
In the bowl of the stand mixer, add the previously sifted flours and sugar. Add the yeast, grated lemon zest, vanilla seeds, and potato flakes.
In a jug, mix the eggs with water, oil, and salt.
Start the mixer and gradually pour in the prepared liquid. Let it knead well for 5-6 minutes.
Stop the machine, transfer the dough to a well-oiled bowl and let it rise until doubled in size at 75°F. When the dough has risen well, deflate it and turn it onto a lightly floured work surface with rice flour.
Take pieces of dough weighing 2 oz and form balls. Gently make a hole in the center to shape a donut. Place each donut on a piece of parchment paper on a tray.
Lightly brush with sunflower seed oil and cover with plastic wrap. Let them rise again in a warm place until doubled.
Heat the oil to 338°F and immerse the donuts with the parchment paper. After 1 minute, use tongs to remove the paper and let them cook until golden brown.
Drain on a paper towel and then roll in sugar.
