Refreshing Watermelon Drink

The Refreshing Watermelon Drink is a decidedly summer recipe, tasty, refreshing, which I consume very often in the heat, because I love watermelon. Low in calories, it is also suitable for those on a diet, and in the form of a drink it is really a boon. However, do not deprive it of the seeds, which should be blended with the pulp, because it would be a real impoverishment for us. In fact, the seeds are excellent allies for our health, as they are very rich in iron, magnesium, and vitamins. When I have some time available, because the process is a bit long, I recover a good quantity. I wash them, dry them, and arrange them on a baking sheet lined with parchment paper, grease them with a little oil, salt, and bake them in the oven at 350°F for about 15 minutes, just enough time to dry them. After that, I consume them as a snack.

Ingredients

  • 23 oz watermelon pulp
  • 1 cup cold water
  • to taste fresh mint leaves
  • 8 ice cubes

Tools

  • 1 Blender
  • 4 Glasses

Preparation

Remove the watermelon rind, taking care to also eliminate the white part, as it is somewhat indigestible, but not the seeds.

Why keep them? They are an excellent source of minerals and vitamins, which are very good for our body. Furthermore, once blended we will no longer notice their presence, not even thinking that they might darken the drink.

Cut the watermelon pulp into pieces, take the quantity we need, and put them directly in the blender, adding only part of the water because it all depends on the capacity of the blender.

Blend for a long time, until you get a smooth and homogeneous puree without any stray pieces of watermelon and seeds, which are very annoying while drinking this delicious drink as they remain between the teeth.

Once finished blending, pour the mixture into a pitcher, add the rest of the water and mix.

Serve our Refreshing Watermelon Drink cold, directly in glasses, adding the ice cubes and a few fresh mint leaves.

Tips and Storage

The Refreshing Watermelon Drink keeps for a few days in the refrigerator, but before serving it, stir it, because the pulp tends to separate from the water.

Put it in a bottle with an airtight cap, to preserve it from odors and flavors deriving from other foods stored in the refrigerator.

You can prepare ice cubes with fresh mint leaves directly incorporated.

In this way, it will not be necessary to find it at the moment of need.
