Gluten-free Valentine’s hearts are crumbly and delicious cookies made with whipped shortcrust pastry, perfect for your sweetheart. Easy to make, they stay soft for several days. They can also be made lactose-free by using margarine.

Ingredients
- 9 oz butter (or vegetable margarine)
- 1 cup sugar
- 2 1/3 cups gluten-free rice flour
- 1 tsp baking powder (gluten-free)
- 1 cup almond flour
- 1 egg
- 1 vanilla bean

- 1 Bowl
- 1 Piping bag
- 1 Spatula
- 1 Baking tray
Steps
Beat the butter with sugar and vanilla bean seeds using an electric mixer. When the mixture is fluffy, add the egg and mix well. Add the rice flour, almond flour, and baking powder. Mix with a spatula. Put part of the mixture in a piping bag with a star nozzle.
Form the cookies on a baking tray lined with parchment paper. Bake in a preheated oven at 350°F for about 20 minutes. Remove from oven and let cool completely.
Melt the dark chocolate in a double boiler or microwave. Half-dip the cookies in the chocolate and place them on a cooling rack.
Immediately decorate with sprinkles and let dry for a couple of hours at room temperature.
