You can store the cake in a cake container for up to a week. You can also freeze it for up to 3 months.
If you like, you can decorate the cake with a lemon glaze simply by mixing lemon juice with about 3/4 cup of powdered sugar. You’ll get a glaze that you can pour directly over the cake.
Alternatively, to make the cake moister, you can prepare a syrup with 1/4 cup of granulated sugar and the juice of 1 or 2 lemons. Dissolve it over low heat and let it cool. When the cake is cold, slightly poke it and pour the lemon syrup over it.
You can replace the butter with 1/2 cup of vegetable oil.
