Chicken Kefta with Zucchini and Carrots

Chicken Kefta with Zucchini and Carrots is a kind of chicken or turkey meatball, flavored with whatever you like, and served on a skewer. They can be cooked in the oven, in a pan, or even on the grill; however, for grilling, I recommend using steel skewers as wooden ones might catch fire during cooking. The ingredients for this delicious recipe are very few, but the result is excellent, whether eaten hot or at room temperature. If you want them to be more flavorful, prepare the mixture a few hours in advance or even the day before, and store it in the refrigerator in the same preparation bowl, but covered with plastic wrap. This way, the mixture will not dry out or absorb bad odors.

With this quantity, I made 12 skewers of a regular size, but if you’re organizing a buffet, you can make smaller ones, using smaller sticks.

How to Prepare Chicken Kefta with Zucchini and Carrots

To prepare the Chicken Kefta with Zucchini and Carrots, I suggest organizing your work table with all the ingredients already measured.

This way you won’t forget anything and you’ll have everything at hand.

Wash the carrots and zucchini well, dry them and grate them using a multi-face grater directly into a large bowl.

Add the ground turkey or chicken, depending on your preference, along with salt and mix.

Finally, add the grated Parmesan and bread crumbs, along with the egg, and continue mixing.

Once the mixture is ready, form about 12 meatballs and lengthen each one like a small breadstick.

Skewer with a wooden stick and place the skewers inside a baking tray lined with parchment paper.

Drizzle with extra virgin olive oil and bake in a preheated oven at 350°F so all the fibers seal.

Cook for about 30 minutes, or until they are nicely golden.

Serve your Chicken Kefta with Zucchini and Carrots hot, although in this hot period, they are good at room temperature too.

Tips and Variations

Chicken Kefta with Zucchini and Carrots can be kept for a few days in the refrigerator and can also be frozen without any problem.

However, it is important to defrost properly, otherwise there is the risk of small to large intoxications.

Additionally, the food loses all its liquids, flavor, and texture, essentially leaving only the fibers.

If you want to make it more flavorful, you can add chopped garlic and other spices or types of aromatic herbs.

Even with thinly sliced peppers, they are not bad at all.
