Quick Bechamel

The QUICK BECHAMEL is a delicately flavored sauce, ready in just 10 minutes.

It is usually used to dress classic baked pasta or lasagna, but I assure you it is also perfect for accompanying meats and roasts.

Below you will find the recipe to prepare this sauce with the Thermomix which will allow you to put all the ingredients in the jug without having to stir the mixture, but also the steps for traditional cooking in a pot.

Ingredients

  • 2 cups milk
  • 3.5 tbsps butter
  • 0.4 cups flour
  • Half teaspoon salt
  • to taste nutmeg (optional)

  • Food processor Thermomix Tm5
  • Pot
  • Whisk

Steps

  • Place the milk, small pieces of butter, flour, salt, and if desired, a pinch of nutmeg in the Thermomix jug.

  • Cook for 7 minutes, 194°F, speed 4.

  • Our quick bechamel is ready to be used!!!

  • In a pot over medium heat, melt the butter until it becomes liquid but does not burn.

  • Add the flour to the melted butter and mix well with a wooden spoon or a whisk until a smooth, lump-free mixture is obtained.

  • Continue stirring and cook the mixture for 1-2 minutes until golden.

  • At this point, pour the milk slowly into the pot, stirring constantly with a whisk to avoid lumps.

  • Cook over medium-low heat, stirring constantly, until the bechamel starts to thicken and reaches a creamy consistency.

  • Adjust salt and nutmeg and stir.

  • Our quick bechamel is ready.

Storage and tips …

Store in the fridge in a container with an airtight seal or in a glass jar with lid.

Consume within 2 days

If you use it to dress meats or roasts, try adding 2 tablespoons of grated cheese!

You can replace whole milk with lactose-free milk

  • I made the bechamel but it came out too thick. How can I fix it?

    You just need to add a little bit of milk and stir.
