You will only need some salmon trimmings, a pat of butter, heavy cream, and a splash of brandy to give it an extra touch. Preparing it is extremely simple because it doesn’t require any special skills. You just need to sauté the salmon in a pat of butter, deglaze with brandy, and then add the cream. This way, you will have already created the sauce to finally combine with the pasta.

To make the salmon pasta
Start by melting a pat of butter in a nonstick saucepan over medium heat. You can also use margarine if you prefer or extra virgin olive oil.
Continue by adding the salmon trimmings once the butter has melted, and mix everything well with a wooden spoon. Sauté for about 3 minutes.
At this point, to give it a unique touch, add a tablespoon of brandy to deglaze, stir, and let the alcohol completely evaporate before moving on to the next step.
Proceed by adding a package of heavy cream, then continue stirring until the salmon and cream create a single, homogeneous sauce. Once mixed, turn off the heat.
Meanwhile, cook the pasta in salted water, and once it has reached the desired cooking level, transfer it with a slotted spoon into the saucepan with the sauce. Turn the heat back on for a few seconds and let it cook for a few minutes, stirring continuously. Add a few ladles of cooking water if necessary.
To finish, place a portion of salmon pasta on a plate and garnish with fresh parsley before serving at the table!

If you want a more liquid and creamy effect, add cooking water to achieve the desired effect.
