Christmas Brioche Bread
If you don’t feel like making panettone, I suggest making a Christmas Brioche Bread with 4 different fillings that you can customize as you like, with candied fruit, raisins, oranges, chocolate, etc. And to make it even more delicious, I have covered it with a layer of white chocolate. If you like doughs, this is a recipe you can have fun with! A great dessert for breakfast during this time of year!!!

Ingredients for the Christmas Brioche Bread:
These quantities are for 2 Brioche Breads
- 1/4 cup milk
- 1 tablespoon sugar
- 0.88 oz fresh brewer's yeast
- 1/2 cup Manitoba flour
- The Starter Dough
- 3/4 cup sugar
- 3 1/2 cups Manitoba flour
- 3 eggs
- 1/4 cup plain white yogurt
- 3.5 oz butter
- vanilla
- lemon zest
- orange zest
- raisins
- candied fruit (Optional)
- chocolate chips

Preparation of the starter dough:
In a bowl, put the flour, sugar, yeast, milk, and mix. Let it rest for about 30 minutes.
After 30 min…. Add the flour, sugar, starter dough, eggs, yogurt,
Add lemon zest, orange zest, and vanilla. Mix for about 10 minutes at low speed. Then knead for a few minutes by hand.
Place the dough back in the mixer and gradually add the butter. Knead until you get a smooth and elastic dough. Once ready, form a ball and place it in a tall and narrow container. Let it rise until doubled in volume.
After about an hour, take the dough and divide it into two equal parts. Take the first piece and divide it into 4 equal parts. Roll out one piece at a time, add candied fruit to taste, and roll up. Proceed in the same way with the other pieces. Place the 4 obtained rolls in the mold.
Cover with plastic wrap and let rise until doubled in volume. Roll out the remaining half of the dough and proceed in the same way. After rising, brush with egg yolk and milk and bake at 350°F for about an hour.
Once baked and cooled, cover with melted white chocolate and decorate as desired.
