With eggs, you know, you can make a multitude of recipes. They are a fantastic ingredient because they form a base and a prerequisite for many preparations. Let’s say that without eggs, some recipes couldn’t exist, think of sponge cake, or zabaglione where the prerequisite is indeed the egg!

In this recipe, I took as a theme the omelet, which is not a frittata, even if it may seem very similar. The main difference is that the omelet is cooked only on one side and then rolled onto itself. Moreover, another difference is that the omelet uses exclusively beaten eggs without other mixed ingredients.

However, for this version, I decided to stuff the inside of the omelet with cooked ham and smoked provola. A not too difficult procedure that allows you to obtain a delicious dish that everyone can enjoy!

Ingredients

For the ham and cheese stuffed omelet

  • 4 eggs
  • 1 pinch salt
  • 2 slices cooked ham
  • 4 pieces smoked provola
  • to taste extra virgin olive oil
  • to taste chives

Steps

To make the ham and cheese stuffed omelet

  • First, start by beating 2 eggs in a bowl (useful for one serving). Add a pinch of salt and set aside for now.

  • Continue by heating a drizzle of extra virgin olive oil over medium flame in a medium-sized non-stick pan, and once at temperature, pour in the previously beaten eggs and quickly move on to the next step.

  • Proceed without waiting by placing directly on the still liquid egg, a slice of ham and 2 pieces of smoked provola.

  • At this point, wait a few minutes until the edge of the egg starts to solidify, then begin rolling the omelet using one or two spatulas.

  • To complete, roll the entire omelet and leave it in the pan for a few more minutes, turning it over several times on both sides to reach the desired level of cooking.

  • Finally, transfer the omelet onto a plate and garnish with chives and, if you like, black pepper before serving at the table!

Use fresh organic free-range eggs if you can.
