The Savory Crostini with Yogurt and Cherries are truly appetizing, delicious, and very easy to prepare. Maybe a bit time-consuming if you use homemade Yogurt Cream instead of regular spreadable cheese. However, I assure you the difference is enormous. This time, for a change, I also prepared them with special bread: Pea Flour and Walnut Bread. The result was excellent, but they are also delicious with other types of bread, like a baguette. Do not slice the bread too thinly, as it might dry out too much once toasted and cooled. I find these crostini excellent as appetizers, aperitifs, but also as a main dish, because they are truly complete, and especially fresh, light, ideal for the early warm weather.

How to Prepare Savory Crostini with Yogurt and Cherries
To prepare Savory Crostini with Yogurt and Cherries, let’s organize ourselves the day before, as the first thing to do is to make the Yogurt Cream.
Once ready, set up all the ingredients on the work surface, pre-measured to have everything at hand.
Thoroughly wash the cherries, dry them, remove the stalk, cut them in half, and pit them. After also cleaning the rosemary, finely chop it with a sharp knife.
Pour the yogurt cream or robiola into a bowl and incorporate the extra virgin olive oil, salt, and pepper.
Add half the rosemary and, after mixing all the ingredients well, let the cream rest in the refrigerator for half an hour. Meanwhile, slice the bread and toast it in the oven or in a non-stick pan. Once the bread has cooled, spread the right amount of cream on each crostino.
At this point, place the cherries on top and drizzle the honey over the surface, as much as you like.
Serve your Savory Crostini with Yogurt and Cherries immediately, but before bringing them to the table, sprinkle them with the remaining chopped rosemary.
Tips and Variations
If you want to store the Savory Crostini with Yogurt and Cherries, do not assemble them, otherwise, the bread might become too soft.
As for the cream, you can keep it in the refrigerator for at least 2 days.
A great alternative to rosemary is adding chives and thyme to the yogurt.
Other types of herbs will still make this appetizer truly irresistible.
