Mini Pan-rozzi from Abruzzo
A typical Christmas dessert from Abruzzo made in a dome-shaped mold with almonds, amaretto liqueur, and semolina, topped with a layer of dark chocolate. This year, to change things up, I decided to make single servings so that they are much more convenient to serve as they are already portioned! I must say they are really delicious and will surely be very much appreciated by your loved ones!

Ingredients for Mini Pan-rozzi from Abruzzo:
- 4 eggs
- 3/4 cup almonds
- 1/2 cup semolina
- 2/3 cup sugar
- 6 tbsp butter
- lemon zest
- orange zest
- 4 tsp amaretto (liqueur)
- 7 oz dark chocolate
Steps
Preparing the mini Pan-rozzi from Abruzzo is very simple, watch the video HERE.
First, separate the egg whites from the yolks. Add the sugar to the egg whites and beat them. Add grated lemon zest and orange zest to the yolks.
Beat them. Add the melted butter and finely chopped almonds, and mix well. Add the liqueur,
Add the semolina and mix. Gradually fold in the beaten egg whites. Pour the mixture into sphere-shaped molds. Bake at 350°F for about 20 minutes.
After baking, let them cool down well, then glaze them with the melted chocolate. Wait about an hour for the chocolate to harden.
