The Strawberry and Fresh Mint Galettes is a very simple dessert, prepared in no time, especially if using, as in this case, a ready-made puff pastry. When I have time, I prefer to make it by hand, as I can choose the type of flour I prefer, but I must admit that this way, I can create a delicious dessert even at the last minute. If you don’t want to use jam as a base for the pie, then once you’ve cut the strawberries into wedges, pour them into a bowl and toss them with 3 tablespoons of sugar and the juice of half a lemon. Wanting to enhance this delight, you can always add dried fruits, such as sliced almonds, walnuts… Also, you can fill it with all the fruit you like, especially in spring and summer, when there are so many options. Do you like single servings, especially when it’s a buffet? Then you just need to use a fairly large pastry cutter if you want to cut the puff pastry into 4, but in the absence of this, a small tea plate will do just fine.

Ingredients
- 1 package puff pastry
- 2 tablespoons strawberry jam
- 300 g fresh strawberries
- 1 sprig fresh mint
- 1 egg yolk/milk
- as needed sliced almonds
- as needed raw cane sugar

- 1 Baking dish
- 1 parchment paper
- 1 Brush
Preparation
Wash the strawberries under running water, to remove any dirt residue.
Dry them, remove the stem, cut them into 4, and place them in a small bowl.
Unroll the puff pastry and place it with its parchment paper directly in a large enough baking dish, preferably round.
Prick it well with the tines of a fork.
Pour 2/3 tablespoons of strawberry jam over it, use a spoon to spread it evenly but not over the entire surface.
Remember to leave about 1 1/2 inches of border free.
Arrange the strawberry wedges over the jam, and fold the edges over themselves, so that they cover part of the filling.
Beat an egg yolk, and with a kitchen brush apply it to the edges of the galette. Alternatively, if you don’t want to waste the egg, you can apply milk.
At this point, sprinkle the edges with sliced almonds and the entire galette with raw cane sugar. Finish with chopped mint leaves.
Bake in a preheated oven at 350°F, and let it cook for about 30 minutes, or until our dessert becomes golden brown.
Serve our Strawberry and Fresh Mint Galettes, after letting it cool down and before bringing it to the table, sprinkle it with additional fresh mint leaves.
Advice and Storage
The strawberry galette keeps for a few days, just like a tart.
Usually, I store it in a glass container with a dome.
