You can store the pasta with fava beans and sausage in the fridge for up to 3 days.
You can replace the sausage with bacon or even with diced pancetta, speck, cooked ham, mortadella.
For a completely vegetarian version, you can omit both the sausage and the grated Parmesan.
For a baked version of this pasta, add plenty of grated cheese and mozzarella to the orecchiette and, if you want to make it not only stringy but also creamier, add a few tablespoons of béchamel, then bake it at 392°F for about 20-30 minutes.
