All the dishes I am particularly fond of almost always come from my mother’s cooking, who was the only cook at home when I lived with my parents, delighting the family with hundreds of recipes.
In particular, I’ve always appreciated green beans with pic pac since I can remember because of their simplicity, yet they release a typically Mediterranean flavor characterized by a sauce flavored with garlic and oil, called “picchi pacchiu” in Sicilian.
For the successful outcome of this recipe, you need to get fresh green beans, the main ingredient of this dish, and canned peeled tomatoes. The process is very simple as it involves boiling the green beans in salted water and preparing the sauce, which are combined at the end together.
Ideal to enjoy with bread as an appetizer or to accompany first courses of red or white meat, thus using them as a side dish.

Steps
To make the green beans with pic pac
To start, wash the green beans under running water in a pasta strainer. Once done, place them on a cutting board and remove all the ends from each green bean with the help of a knife.
Next, bring salted water to a boil in a pot. Once boiling, add all the previously cleaned green beans and cook, covered, for about 12 minutes.
Meanwhile, in another small pot, prepare a sauté of garlic with EVO oil. Once browned, pour in the content of a can of peeled tomatoes, add salt and a pinch of sugar, and let it cook, covered, over medium heat for about 20 minutes.
Continue cooking both pots, tasting the green beans occasionally to avoid them being too raw or overly soft.
Finally, drain the green beans in a pasta strainer and wait a few minutes to let them lose all the cooking water. Now take a baking dish and place the green beans inside.
To finish, pour all the pic pac over the green beans, completely covering the surface. Add a few basil leaves for garnish and let it rest for about 30 minutes before serving at the table.
Tip!
The green beans with pic pac taste better if consumed the next day, taken from the fridge where they can be stored for about 3 days.

Can I also use frozen green beans?
Of course you can, but the taste won’t be exactly the same.
