– 6 eggs (10 inch cake pan) –> increase portions above to 12 people
– 8 eggs (11 inch cake pan) –> increase portions above to 16 people
- 4 eggs (medium)
- 2/3 cup sugar (or more according to taste)
- 1 cup all-purpose flour
- 5 tbsp potato starch (or corn starch, rice starch, rice flour, or maizena)
- 1/4 cup unsweetened cocoa powder (for a white base, replace cocoa with more all-purpose flour)
- 1 tsp baking powder
- 2/3 cup partially skimmed milk (or plant-based milk, alternatively use diluted liqueur or syrup)
- 3/4 cup fresh whipping cream (or more for a richer filling)
- 1 tbsp condensed milk (or powdered sugar)
- 1 oz chocolate (shavings, alternatively chopped nuts)
- 3 oz cocoa wafers (or Togo sticks)

BAKING: in a static oven at 340°F for 45 minutes.

Use room temperature eggs.
Place parchment paper on the bottom of the cake pan, while brushing oil (or butter) on the sides of the baking pan and sprinkle with flour.
Weigh and sift all the flours and baking powder.
Separate the egg whites from the yolks.
With the electric mixer (or stand mixer), whip the egg whites with the sugar until stiff peaks form. With a spatula, gently fold in the yolks.
Then the sifted flours, half at a time.
Gently mix the batter until uniform.
Pour the cake batter into the buttered and floured pan. Level the surface with the back of a spoon.
BAKINGBake in a preheated static oven at 340°F for about 45 minutes, always testing with a toothpick. Once baked, turn off the oven and leave the cake inside for another 10 minutes to stabilize the baking.
FILL the quick birthday cakeTurn out the warm cake and use it upside down (keep the bottom part on top and the top part at the bottom).
With a long, sharp bread knife, make two horizontal cuts in the cake (or if preferred, make a single horizontal cut).
PREPARE THE FILLING
Use cold liquid whipping cream from the refrigerator. Pour it into the bowl along with the condensed milk (or powdered sugar). Start whipping it at low speed and then increase to high speed. Be careful not to overwhip, or it will become separated and butter-like.With a teaspoon, moisten all the internal layers of the cake with simple milk (or other soaking liquid).
Fill the various layers of the cake with whipped cream, cover each time with the upper layer.
Also moisten the top layer.
Then, cover the last layer with the remaining whipped cream.
And finally, sprinkle the top with dark chocolate shavings (or white).
Then, decorate the entire circumference of the cake with wafers (or other chocolate-covered cookies), making sure to shorten them as needed.
For the writing or number, use peeled almonds sliced.
