Zucchini, Salmon, and Philadelphia Rolls are stuffed rolls perfect for a tasty appetizer and quick meal with only three ingredients. They are in fact zucchini slices that we cook for just a few minutes in the pan and then stuff with Philadelphia and smoked salmon. We roll the zucchinis onto themselves and in just a few minutes we have delicious rolls, perfect for lunch and dinner, especially in the summer as they require very little cooking time. If we slice the zucchinis very thinly, we can even use them raw! Additionally, these rolls are a light idea that combines vegetables and proteins, making them perfect as a main dish for those following a diet regimen.

- 2 zucchinis
- 7 oz cream cheese (such as Philadelphia)
- 3.5 oz smoked salmon
- salt

Steps for Preparing Zucchini and Salmon Rolls
Prepare the Zucchini, Salmon, and Philadelphia Rolls first by washing the zucchinis, trimming them, and slicing them lengthwise with a knife or preferably with a peeler to achieve reasonably thin slices.
Heat a non-stick pan, or alternatively a grill, and cook the zucchini slices for one minute per side. Season them with a pinch of salt.
Now we’re ready to make the rolls: lay each zucchini slice on a cutting board and spread it with two teaspoons of Philadelphia.
Place salmon slices in the center part and tightly roll up the zucchini to create a roll. Continue in this manner until all ingredients are used.

You can store the rolls in the fridge tightly closed in an airtight container for up to two days.
You can replace the Philadelphia with herb or salmon Philadelphia. Furthermore, you can enrich the cheese with your favorite herbs like chives, basil, mint, oregano, etc.
Instead of smoked salmon, you can also use smoked swordfish or tuna. If you don’t like fish, you can replace it with slices of cooked ham, salami, or speck.
