The log is simply prepared with a sponge cake that’s very soft, and we can also roll it to make delicious filled sweet rolls.
The white cream in the filling is made from a mix of recipes, which include a simple white cream and very tempting whipped cream.

Ingredients COCOA LOG CAKE WITH APRICOTS AND CREAM RECIPE
- 4 eggs
- 3/4 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup unsweetened cocoa powder
- 2 tbsp butter
- 8 apricots
- 1 cup milk
- 1/3 cup cornstarch
- 3 tbsp sugar
- 1 packet vanillin
- 1 cup whipping cream

FOR THE PREPARATION OF THE COCOA LOG CAKE WITH APRICOTS AND CREAM RECIPE
Separate egg whites and yolks.
Beat with electric whisks the egg whites.
Sift flour and cocoa and add them gradually. Finish with the remaining stiff egg whites. Line the baking pan or sheet with parchment paper and butter it or use a baking release spray.
Pour the mixture and level it. Bake in a preheated oven at 350°F for about 12-13 minutes.
Remove the roll and turn it onto wet and squeezed parchment paper, and if you’re making a roll, roll it up until it cools to then fill it.
For this COCOA LOG CAKE WITH APRICOTS AND CREAM RECIPE we only need to use rectangular pieces of dough, so let it cool completely and then cut rectangles of 4 x 8 inches, and you will get 3 from this sponge cake.
Now let’s move on to the cream filling!
FOR THE CREAM I wash and dice the apricots, leaving some slices for the final decoration.
I put milk with sugar and cornstarch in a saucepan, and after mixing everything well, I put it on a low flame and let it thicken while stirring.
I now cover it with plastic wrap and let it cool completely, stirring occasionally to avoid forming unpleasant lumps.
Now I whip the cream and carefully add the thick white cream.
I keep 3/4 tablespoons of cream for the filling, and to the rest, I add the apricot cubes, mixing well.
Now I place a rectangular piece of sponge cake on the serving tray and fill it with the apricot cream, level it, then add the second layer, then more white cream with apricots, and finish with the third layer of cocoa sponge cake.
I then dust with powdered sugar, decorate with a few tufts of white cream without apricots set aside earlier, and finish with some slices of fresh apricots, nicely firm and ripe!
