For the sausage and onion sandwich
- 2 pork sausage links
- 1 onion
- to taste extra virgin olive oil
- 1/2 cup apple cider vinegar
- 1 tablespoon sugar
- to taste slices of Emmental cheese
- to taste barbecue sauce

To make the sausage and onion sandwich
Begin by taking the sausage links and scoring them along their length to remove the casing completely.
Continue by slightly flattening the sausage pieces to make them cook better in the pan. Try to give them a straight shape by eliminating the curve.
In the meantime, prepare the sweet and sour onion in a small pan. Finely slice the onion, heat the extra virgin olive oil, and let it stew over medium heat for about 10 minutes. Add the vinegar and sugar and let it soften for another 10 minutes.
At this point, sear the sausages on both sides in a non-stick pan for about 10 minutes or until the desired level of doneness is reached.
Next, cut the roll in half and toast only the inside on an electric grill until slight scorch marks form. Then remove the roll from the grill and set it aside.
To complete, fill the sandwich by placing 2 cooked sausages inside and also add 2 slices of Emmental cheese. Close the sandwich and cook it inside the closed grill for a few minutes.
Finally, remove the sandwich and finish seasoning it with a nice dose of sweet and sour onion and barbecue sauce. Place on the plate and serve with a handful of mixed lettuce or French fries!
