Steps for Flat Green Beans with Tomato
Wash the flat green beans well.
(If the dirt and other residues are excessive, soak the green beans in cold water for a few minutes before rinsing them).
Remove the ends with a knife: if necessary, also the stringy part on the sides; if they are very large, cut them into two or three parts with a diagonal cut.
Put your pot on the stove, pour in the oil and the chopped onion.
Gently stew for a few minutes. Add the flat green beans, the chopped tomatoes, and salt.
Sauté for a few minutes over high heat, add half a cup of water, lower the heat and cook for about 15/20 minutes with the lid on until they are soft.
Pierce them with a fork, if they are soft, otherwise, continue cooking, checking from time to time
Remove the lid, turn up the heat and cook for 2 minutes to reduce the sauce.
Serve the flat green beans with tomato with plenty of basil.
Enjoy your meal
Tips
They keep in the fridge for about 2 days.
Compared to other legumes, green beans have fewer calories, less protein, and less carbohydrates, but are much richer in water.
Perfect for the summer diet thanks to their supply of liquids and minerals (potassium, calcium, phosphorus, folic acid), they are diuretic and very rich in fiber.
They contain vitamin A and, to a lesser extent, vitamin C. The acid component is very low, so they are excellent foods for those suffering from gastritis. Usually, they are eaten boiled and seasoned with oil and salt, sometimes even lemon, or sautéed in a pan with fresh tomato, but they also serve as great ingredients for savory pies, pasta condiments.
