Preparing the breaded pumpkin slices is really simple: once sliced fairly thin, I dipped them in egg, then in breadcrumbs flavored with chopped herbs and grated Parmesan. Then I fried them for a few minutes until golden. Delicious!!

- 14 oz butternut squash (sliced thin)
- 2 eggs
- as needed breadcrumbs
- as needed rosemary (or other herbs to taste)
- as needed thyme (chopped)
- 2 tbsps grated Parmesan cheese

- 1 Cutting board
- 1 Slicer
- 2 Plates
- 1 Pan
Steps
HOW TO MAKE THE BREADED PUMPKIN SLICES RECIPE
First, clean the pumpkin well, remove the stem and slice it with a sharp knife or slicer into slices about 0.2 inches thick, then, remove the skin.
I used the slicer and got all even slices. If you have a hard time slicing it with a knife, remove the skin first.
Then, beat the eggs in a plate, add the pumpkin slices and let them rest. Meanwhile, in another plate, put the breadcrumbs, the chopped herbs (I used rosemary needles cut finely with scissors and thyme) and 2 tablespoons of grated Parmesan cheese; mix well.
Take one slice at a time and pass it in the breadcrumbs.
Put a pan with oil on medium/high heat and let it heat up. When the oil is hot, cook the pumpkin slices on both sides until they are nice and golden. If you like them crispier, leave them a few minutes longer, but don’t let them burn.

Storage
I recommend consuming the breaded slices immediately to keep them crispy. If there are leftovers, store them in the fridge covered with plastic wrap and reheat in the microwave when needed.
