Sweet and Sour Friggitelli

Simple yet full of flavor and nourishment! We are talking about sweet and sour friggitelli, a variety of sweet peppers that are not spicy at all despite their name.

These, in particular, were given to me by a dear friend who grew them at his countryside home, allowing me to taste the organic goodness of these fantastic vegetables.

I imagined the preparation inspired by the sweet and sour pepper recipe from the start, so I followed the same procedure but with shorter cooking times since friggitelli cook faster.

Very easy to make, it just took some thorough cleaning, then I removed the seeds and sautéed them with oil and water before finishing with vinegar and sugar, creating the sweet and sour flavor to characterize the dish.

For sweet and sour friggitelli

  • 1.1 lbs sweet peppers (friggitelli)
  • 1 clove garlic
  • as needed extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp sugar
  • as needed fresh mint

Steps

To make sweet and sour friggitelli

  • First, remove the top part of each pepper, then cut them lengthwise into 2 parts. If the friggitelli are particularly long, cut horizontally as well.

  • Next, rinse the cut peppers in a large bowl under running water, making sure to remove all seeds from the inside. Once washed, drain them in a colander.

  • At this point, heat the extra virgin olive oil in a large saucepan and sauté a whole crushed garlic clove for a few minutes.

  • For this step, once the temperature is reached, add the friggitelli to the saucepan and stir well to coat all pieces with oil. Add 1/2 cup of water, then cook over medium heat for about 10 minutes with the lid on.

  • Continue checking occasionally and stir if necessary. After 10 minutes, remove the lid, add vinegar and sugar, and mix well.

  • To finish, raise the heat and allow the liquid to reduce until it forms a thicker sauce. Stir repeatedly to prevent burning.

  • Finally, transfer the cooked friggitelli to a serving dish and garnish with the remaining sauce from the saucepan. Lastly, season with plenty of chopped fresh mint and serve at the table!

Tip!

You can also use white wine vinegar as an alternative. Use onion if you prefer it instead of garlic.
