You can store this pasta for up to 2 days in the fridge, reheating it when serving with a few tablespoons of hot broth in a pan to make it creamy again.
Instead of mezze maniche, you can use other pasta shapes including fusilli, rigatoni, farfalle, or even long pasta like spaghetti, tagliatelle, linguine, etc.
You can also use frozen porcini mushrooms if fresh ones are not available, or other types of mushrooms like champignons, chanterelles, honey mushrooms, etc.
You can replace provola with good smoked scamorza cheese. If you prefer a vegetarian dish, you can simply omit the cheese from the ingredient list.
