Mediterranean-Style Chicken Milanese

Ingredients

  • 1 chicken breast
  • 1.5 cups cherry tomatoes
  • 1.75 oz green olives
  • 3.5 oz provola cheese
  • 2.75 oz grated parmesan cheese
  • 2 eggs
  • 1 coffee cup milk
  • 2 cups breadcrumbs
  • to taste oregano
  • to taste extra virgin olive oil
  • to taste roast seasoning
  • to taste salt

Steps

  • First, take a whole chicken breast and slice it, or have the butcher do it for you.

    Slice the olives into rings and set aside.

    Wash the cherry tomatoes under running water, cut them into quarters and place them on a small plate.

  • In a bowl, break the eggs, add salt, grated parmesan cheese, salt and milk, and mix well with a whisk or fork until you get a homogeneous mixture.

    Pour the breadcrumbs onto a flat plate or tray.

    Bread the chicken slices by dipping them first in the beaten egg and then in the breadcrumbs, and place them on a baking sheet previously lined with parchment paper.

  • Top each slice with tomatoes, olives, and season with oregano, roast seasoning, salt, and a drizzle of extra virgin olive oil.

    Bake and cook for about 20 minutes, then remove the slices and cover them with diced provola cheese.

    Return to the oven and complete cooking for about 5/7 minutes.

  • If using an air fryer, cook for 15 minutes at 375°F
