- 2.2 lbs potatoes
- 8.5 oz tuna in oil
- 4 hard-boiled eggs
- 2 Tropea red onions
- to taste extra virgin olive oil
- to taste white wine vinegar
- to taste salt
- to taste pepper
- to taste chopped parsley

HOW TO PREPARE POTATO SALAD WITH TUNA, RED ONION, and HARD-BOILED EGGS
Wash the potatoes under running water and then boil them starting from cold water until when pierced with a skewer, the flesh is tender and cooked. Drain them, let them cool, and cut them into medium-sized chunks.
After placing them in a bowl, add the drained tuna in oil with the sliced red onions and the hard-boiled eggs (boiled for 7/8 minutes from the boiling point).
Clearly the onion slices from Tropea should be separated into rings, the tuna (better if bought in a glass jar) should be added in small chunks, and the cold hard-boiled eggs should be cut into wedges.
Prepare a vinaigrette with vinegar, oil, salt, and pepper and dress the tuna, hard-boiled egg, and red onion salad, covering and keeping it in the refrigerator until it’s time to eat.
A sprinkle of fresh chopped parsley goes really well…
