Given the quick preparation time, it is always preferable to consume this dish immediately. Alternatively, you can prepare the cauliflower cream in advance, store it in the fridge, and then use it when it’s time to dress the pasta.
We used herb-flavored spreadable cheese which you can replace with classic or light spreadable cheese, or with other creamy cheeses like ricotta, stracchino, crescenza, mascarpone, etc., or for an even more intense flavor, with gorgonzola.
You can also make a completely vegan version by not using the spreadable cheese or replacing it with soy vegan cheese.
You can add the herbs or spices you prefer, such as sage, thyme, marjoram, or chili pepper, turmeric, curry, etc. Or you can sauté the cauliflower cream with oil and a clove of garlic or chopped onion.
If you like, you can add diced bacon, speck, or ham to the sauce.
