Tips and Variations
Dates stuffed with gorgonzola and pistachios can be stored in the refrigerator for about 2 days, but placed inside a glass container and sealed tightly.
However, before serving them, take them out of the fridge 15 minutes in advance.
Don’t like gorgonzola? Then you can opt for another type of cheese, but remember that the more delicate it is, the less you will feel the contrast with the sweetness of the date.
If you can’t find large dates, feel free to use small ones, but fill at least 12 of them.
Do you have pistachios at home? Great, then don’t buy the crumbs but chop the ones you have.
Even if you don’t want to use a food processor, after shelling them, place them between two sheets of parchment paper, and crush them with the bottom of a glass.
The large and small crumbs you obtain this way will be perfect for your decoration.
