Crispy and Light Air Fryer Chicken Thighs and Drumsticks | Simple Recipe

I cooked the chicken thighs and drumsticks in the air fryer: crispy and golden on the outside and soft and juicy on the inside just like fried but without the use of oil.

You bring to the table a tasty and light main dish perfect for the whole family without complicating your life.

If you don’t have an air fryer you can cook them in the oven.

Ingredients

Purchase yellow chicken asking the butcher to remove the skin: chicken skin is very fatty, so it is advisable to remove it before cooking.

  • 2 chicken drumsticks
  • 2 chicken thighs
  • as needed lemon juice (or white wine)
  • as needed herb and spice roast mix

Preparation

  • 1. Store raw chicken in a sealed container in the coldest part of the fridge at a maximum temperature of 41°F and avoid its juices dripping onto other foods.

    2. Do not wash raw chicken: you might spread germs through water splashes.

    3. After handling the chicken, thoroughly wash utensils, surfaces, and hands with hot water and soap to avoid cross-contamination.

    4. Cook the chicken well.

    How do I know if the chicken is well cooked?
    Cut a slice in the thickest part: the meat should not have pink traces and the juices should be completely clear.

  • Choose medium-small chicken thighs and drumsticks and ask the butcher to separate them and remove the skin: chicken skin is very fatty, so it is advisable to remove it before cooking.

    Drizzle the chicken pieces with lemon juice – or alternatively with white wine.
    Season the chicken pieces with a herb and spice roast mix.

  • Follow the instructions – program, temperature, and time – indicated in your appliance’s user manual.
    Check the cooking degree from time to time.

    – Set the temperature to 392°F.
    – Preheat for 5 minutes;
    – Remove the cooking basket and place the chicken pieces on the grill accessory avoiding overlapping them;
    – Cook for 25 minutes;
    – Remove the cooking basket and check that the chicken is cooked internally by testing a piece, spreading the meat with the cutlery without breaking it;
    – Turn the chicken pieces;
    – Continue cooking for 5 minutes until crispy and golden.

    Plate it.
    Season with lemon juice.

  • Line a baking tray with a sheet of parchment paper.
    Place the chicken pieces.

    Preheat the oven.

    Medium-small size thighs and drumsticks
    Bake in a convection oven at 356°F for 40 minutes and continue at 320°F for 20 minutes.

    Larger size thighs and drumsticks
    Bake in a convection oven at 392°F for 40 minutes and continue at 356°F for 20 minutes.

  • You can accompany your chicken with homemade light sauces:
    – sugar-free ketchup;
    – sugar-free paprika sauce;
    – light pink sauce or light cocktail sauce;
    – Greek yogurt sauce or dressing;

Storage, tips, and variations

You can marinate the chicken with lemon or white wine and spices for an hour before cooking.

For a more aromatic version, add garlic powder, curry, or smoked paprika to the spice mix.

Reheat it in the air fryer or oven to regain crispiness.
