Sedanini with Zucchini and Bacon

Ingredients

  • 12.35 oz ridged sedanini
  • 7.05 oz sweet bacon
  • 3 zucchini
  • 2 tbsps fresh spreadable cheese
  • 1 shallot (small)
  • as needed extra virgin olive oil

Steps

  • First, wash the zucchini under running water, dry them, remove the ends, and with the help of a grater or a mandolin, grate them finely and set aside, then cut the bacon into small cubes. You can purchase pre-cut bacon if you prefer.

  • Heat a small amount of extra virgin olive oil in a wok, add the minced shallot, combine the grated zucchini and diced bacon, salt, mix well, cover with a lid, and cook for about 15 minutes stirring occasionally.

    If the sauce becomes too dry, add a splash of cooking water.

  • Meanwhile, cook the sedanini in a pot with plenty of salted water.

    Once cooked, drain them and add them to the wok with the bacon and zucchini

  • Add the fresh spreadable cheese and stir for a few minutes.

    Serve warm or cold.

Storage and Tips …

Store in the fridge in an airtight container

You can serve it either hot or cold

Consume within 2/3 days

You can replace the bacon with diced cooked ham and add a sprinkle of grated Parmesan cheese
