Ingredients for Zucchini and Cheese Fritters
- 3 zucchini (about 10.6 oz)
- 5.3 oz cheese (edamer)
- 1 onion (small, about 2.1 oz)
- 2 eggs
- 0.56 cup flour
- to taste salt (and pepper)
- 1 tsp sweet paprika
- to taste lemon thyme
- to taste extra virgin olive oil
Steps for Zucchini and Cheese Fritters
This is a recipe you can make any time of the year as zucchini are always available at the market or supermarkets.
Start the preparation of the zucchini fritters and cheese by grating the zucchini with a large-hole grater, salting them lightly and placing them in a colander to drain the water, trying to stir and squeeze them occasionally, then proceed by grating the cheese and finally finely chopping the onion.
In a bowl, place the zucchini, squeezing them again, then add the cheese, onion, slightly beaten eggs, sweet paprika, another pinch of salt and pepper, lemon thyme, or even parsley or oregano, and finally the flour.
Stir everything with a spatula to blend all the ingredients well.
Place a large non-stick pan on the heat with a drizzle of oil, when it’s hot, take a spoonful of the mixture and pour it into the pan, flatten it slightly and let it cook for a few minutes on both sides.
Keep the flame low otherwise the fritters will quickly take on color externally and remain raw inside.
