Today’s recipe is a delicious Savory Tart with Spinach and Feta. A versatile savory tart suitable for many occasions!
You can fill them in a thousand different ways, great to prepare at the last minute and also perfect as a fridge cleaner.

A dinner-saving recipe or for lunch outside the home, I thought of a savory puff pastry tart filled with spinach and feta.

The combination of the sweetness of the spinach and the saltiness of the feta, a typical Greek cheese, is the strong point of this savory tart that can be served as an appetizer or during a buffet with friends and family.

In practice, a savory tart with spinach but with the shape of a tart.

You can enrich it to your liking also with sliced deli meats like ham or speck cut into strips. Or you can add or replace the feta with another type of cubed cheese like provola.

But for a lighter result, it’s also delicious in our simple version!

Ingredients for the Savory Tart with Spinach and Feta

  • 2 puff pastry (rectangular)
  • 25 oz spinach (fresh or if using frozen, 18 oz)
  • 2 1/2 oz Parmesan cheese
  • 7 oz feta
  • 3 eggs (+ 1 egg white)
  • 1 egg yolk (for brushing)
  • 1 tablespoon milk
  • 1 clove garlic
  • to taste salt
  • to taste extra virgin olive oil
  • pepper

Steps for the Savory Tart with Spinach and Feta

  • Start by thoroughly washing the spinach under running water. Once you have removed all traces of dirt, proceed to cooking.

    Cook the spinach in a frying pan with a drizzle of oil, a clove of garlic, and a pinch of salt. Place them in a colander and press with a spoon to remove the liquids.

    Let cool.

    (If you are short on time, you can opt for frozen spinach and cook them in the pan until fully defrosted. Once ready, set them aside and let cool, removing any residual cooking water if present).

  • In a bowl, place the spinach, grated cheese, 3 beaten eggs and one egg yolk, and the feta cut into cubes. Mix everything.

    Adjust salt and add a grind of pepper.

    (Be cautious with the salt as feta is naturally salty).

  • Roll out one sheet of puff pastry and place it with its paper in a baking pan of about 12 x 8 inches and prick the bottom with a fork.

  • Pour the spinach mixture evenly, folding the pastry edges inward.

  • Roll out the other sheet of puff pastry and use a pizza cutter or knife to cut strips about 0.8 inches wide.

    Place the strips obliquely, first one way then the other, forming a lattice as you do with a tart.

  • Beat one egg yolk with a tablespoon of milk and use a brush to spread it over the strips and edges.

  • Immediately bake in a preheated oven at 375°F for about 25-30 minutes.

    Anyway, until golden.

    (As you know, every oven cooks differently, so always check).

If you like, you can also use shortcrust pastry instead of puff pastry, achieving an equally delicious and tasty final result.

You can store the savory tart with spinach and feta for a couple of days, well-sealed in an airtight container, or you can freeze the cubes in freezer bags.

Before consuming, heat it in the oven for a few minutes.
