Oat Pasta with Vegetables

Perfect to eat hot or cold, just change the vegetables according to the season and you’re done.

Ingredients

  • 12 oz pasta (oat)
  • 1 black oval eggplant
  • 8 cherry tomatoes
  • 1 zucchini
  • 1 bell pepper
  • to taste extra virgin olive oil
  • to taste roast seasoning
  • to taste salt
  • A few leaves mint (fresh)

Steps

  • Take the eggplant, wash it, peel it, cut it into strips and then into small cubes, and set it aside in a large bowl.

    Wash the bell pepper, remove the top, seeds, and white filaments, chop it into small pieces, and add them to the bowl with the eggplant.

    Thoroughly wash the zucchini, remove the ends, cut it into small cubes, and add them to the rest of the chopped vegetables.

    Pour a drizzle of extra virgin olive oil into a large pan and heat it up. Add the chopped vegetables, season with salt and roast herbs (or if you prefer, oregano, thyme, pepper, etc.).

    Sauté the vegetables over medium-high heat for about 15-20 minutes, stirring occasionally. Halfway through cooking, add the washed and quartered cherry tomatoes and continue cooking until all the vegetables are soft but not mushy.

  • Meanwhile, cook the oat pasta in plenty of salted water. Once ready, drain it, keeping a bit of cooking water aside.

    Combine the pasta with the vegetables in the pan, stirring gently. If needed, add a ladle of cooking water to make it creamier.
