Baked Cod with Vegetables
A main and side dish with a single healthy and very simple recipe to prepare! We can define it as a dinner saver recipe because I didn’t have time to go shopping and I found the cod in the freezer ☺️ I added some vegetables (those I had in the fridge 😅), seasoned everything and put it in the oven, so in a very few minutes I solved dinner 😉. Of course, you can also use other types of fish, not necessarily cod!

Steps
The preparation of Baked Cod with Vegetables is very simple and quick, watch the video HERE.
First, clean, wash, and cut the vegetables as you like (pieces, slices, rounds, etc.). Add some salt and spices to taste (pepper, rosemary, garlic, etc.), a bit of oil and mix. Add the olives and combine.
Place the vegetables on a baking tray lined with parchment paper, spread them out. Put the cod on top, add a bit of salt and oil, and cook at 350°F for about 40 minutes.
