Pumpkin glycemic index
Pumpkin of any type → GI 75.
Besides the glycemic index, it’s important to consider the glycemic load which is determined by the quantity of food consumed.
Pumpkin has a high glycemic index but a low glycemic load.

In cases of hyperglycemia, prediabetes and diabetes, pumpkin can be consumed without exceeding portions.

Ingredients
- as needed pumpkin
- as needed wholemeal breadcrumbs
- 1 tablespoon grated cheese (caciocavallo or parmesan)
- as needed chopped parsley (or other aromatic herb)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- 1 drizzle extra virgin olive oil (raw)
Suggested Tools
- 1 Baking tray 10×11.5 inches
- 1 parchment paper sheet
Preparation
Clean the pumpkin.
Cut it into slices not too thick and remove the skin [optional].
Pumpkin skin is edible[except ornamental varieties] and rich in fiber.
You can remove the skin even after cooking.In a plate, pour:
• the wholemeal breadcrumbs;
• the grated cheese;
• the parsley [or other aromatic herb];
• a pinch of salt;
• a pinch of pepper;
and mix.Line a baking tray* with a sheet of parchment paper.
* large, the breaded pumpkin slices should not overlap.Pass the pumpkin slices over the breading on both sides, making it adhere also to the edges, and place them on the baking tray in a single layer, avoiding overlapping.
Not much will adhere, therefore distribute the leftover breading over the pumpkin slices.Alternatively
Distribute the pumpkin slices on the baking tray.
Distribute over the pumpkin slices:
• a pinch of salt;
• the wholemeal breadcrumbs;
• the grated cheese;
• the parsley [or other aromatic herb];
• a pinch of pepper.Preheat the oven briefly.
Bake at 350° F for 20 minutes in a fan oven until evenly golden.Plate.
Drizzle with a bit of raw oil, add a bit more parsley [or other aromatic herb] and grind some more pepper.
Your light baked pumpkin gratin is ready.
