Egg-Free Crepes Roll
You already know that I love rolls of all kinds, both sweet and savory, so I wanted to experiment with a new roll made with a cocoa crepes base, egg-free and a cream made with cream, condensed milk, and mascarpone. It turned out to be a Super Roll! If you like crepes, YOU MUST TRY IT! A simple recipe that everyone can make at home with a few ingredients that you’ll surely find in your pantries. Certainly, during this period of Christmas dinners, you might not know what dessert to make or bring to friends and family, so I recommend this recipe as a very original idea, and you can customize it according to your tastes!

Ingredients for the Egg-Free Crepes Roll:
- 1 2/3 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 3/4 cups milk
- 6 tbsp sugar
- 1 container plain yogurt
- 3 1/2 tbsp vegetable oil
- 2 oz condensed milk
- 2 oz sugar
- 3/4 cup heavy whipping cream
- 3 1/2 oz mascarpone cheese

Crepes preparation:
Mix the flour, cocoa, and sugar. Add the yogurt,
Add the oil, milk, and blend. Brush a little oil on the pan and pour some batter, then spread it over the entire surface.
Cook for a few minutes, turn it, and continue for another 2 minutes, then place it on a plate. Continue until all the batter is used. You can use multiple pans simultaneously to speed up the process.
Cream preparation:
Put the mascarpone, condensed milk, sugar, and cream in a bowl and whip.
Assembly:
Arrange the crepes in a row, slightly overlapping on plastic wrap to form a rectangle/square or similar shape. Spread the prepared cream on top, distributing and leveling it.
Close the sides, then roll it up. Wrap in plastic wrap and refrigerate for a few hours
then decorate as desired.
