The cheesecake with fruit coulis is a creamy dessert that is excellent served cold and made even more indulgent by the addition of the fruit sauce (today with strawberries) that flavors and colors the plate.
This dessert is baked in the oven but is best at room temperature and pleasantly drizzled with the strawberry cream!
I used the last strawberries I found at the supermarket but of course we can also use mixed berries, including frozen ones — highly recommended!

Ingredients CHEESECAKE WITH FRUIT COULIS
- 2 cups plain dry cookies
- 7 tbsp butter (melted)
- 2.5 cups Greek yogurt (plain)
- 3 eggs
- 1/2 cup sugar
- 3.5 fl oz whipping cream
- 2 1/2 tbsp cornstarch
- 1 tsp vanilla extract
- 2 pinches lemon zest (grated)
- 3/4 cup strawberries (or peaches or cherries)
- 1/4 cup powdered sugar
- 1 orange (or lemon, juice only)
TO PREPARE THE RECIPE CHEESECAKE with FRUIT COULIS
For the base I melt the butter in the microwave or in a small pan over very low heat.
I finely chop the cookies with a knife or pulse them in a food processor and mix them with the melted butter, stirring to fully coat the crumbs.
After lining a pan with parchment paper I cover it with this mixture, pressing very well with a spoon or another tool of your choice.
In a bowl I mix the yogurt, the cream, the eggs, the sugar, the cornstarch and the flavorings such as the vanilla and the grated organic lemon zest.
I pour this mixture, which I can also blend with electric beaters, onto the base of the cheesecake, leveling the cream well.
Now I just have to bake it for about 30/35 minutes, depending on the characteristics of your home oven.
I let the creamy cheesecake cool completely before removing it from the pan.
I quickly wash the strawberries and then purée them with an immersion blender.
I pour this mixture into a small saucepan, add the lemon juice and the sugar, and over moderate heat I let it thicken and develop flavor for a few minutes.
I let it cool slightly and then use this strawberry cream to glaze the creamy cheesecake.
I leave it in the refrigerator until ready to serve
