Crispy Carnival Fritters

The Crispy Carnival Fritters are a classic during this period, featuring tables full of festive treats and colors. Since childhood, when my family lived in Riccione, my mother loved to prepare them with me and my younger sister, turning it into a game and a nice way to spend time together. Just imagine how the kitchen looked in those moments… flour flying everywhere, and our faces almost unrecognizable… but so much fun though!!!!!!

Ingredients

  • 1.5 cups Flour
  • 2 tbsps Sugar
  • 2 tbsps Butter
  • 3 tbsps White wine
  • 1 tsp Baking powder
  • 1 pinch Salt
  • as needed Peanut oil
  • as needed Powdered sugar

Preparation

  • First of all, organize your work area with all the ingredients, already measured.

    In a large bowl, add all the ingredients and start mixing.

    Turn everything out onto a wooden work surface and knead just until the dough is smooth and homogeneous.

    Wrap the dough in plastic wrap and let it rest in the refrigerator for about 1 hour.

    Roll out the dough, trying to make it as thin as possible, perhaps using a pasta machine instead of a rolling pin.

    Using a pastry cutter, cut out rectangles about 5 x 2.5 inches.

    Leave them plain, or form them into bows… in short, give the fritters the shape you like best.

    Heat the peanut oil in a high-sided pot, but do not immerse the dough strips until it is hot.

    After a few minutes, drain them, letting them drip on paper towels.

    Place them on a tray and serve your Crispy Carnival Fritters, sprinkling them with powdered sugar and colorful sprinkles.
