Classic Romanian Panettone (cozonac)

This year for the Christmas season I decided to experiment with various panettones from different European countries. My favorite since I was a child was the one my grandmother always made during the holidays. I confess that as soon as it came out of the oven I would eat almost an entire one by myself 🙈 so I absolutely had to try to recreate it as best as possible!

Ingredients for the classic Romanian panettone (cozonac):

  • 5 cups all-purpose flour
  • 1 cup sugar
  • 1 ¼ cups milk
  • 3 egg yolks
  • 0.9 oz fresh yeast
  • 7 tbsp butter
  • lemon zest
  • lemon flavoring
  • vanilla
  • 3 egg whites
  • 2 cups walnuts (Chopped)
  • 0.4 cups unsweetened cocoa powder
  • 0.75 cup sugar
  • rum flavoring
  • vanilla
  • candied fruits (To taste)

Steps

  • Dough preparation:

    We put the flour, a pinch of salt, and the yeast. We combine the milk with the egg yolks and add it a little at a time while kneading.

  • We knead at low speed for about 20/30 minutes, being careful not to let the dough heat up, you can stop occasionally. When the dough detaches from the sides, we add the cold butter in pieces a little at a time and continue kneading. We add some lemon zest,

  • We add lemon and vanilla flavoring. Once the butter is incorporated, we transfer the dough to the work surface

  • We make some folds and then form a smooth ball. We place it in a tall, narrow container and let it rise until doubled in volume.

    Filling preparation:

    We combine the egg whites and chopped walnuts,

  • We add the sugar, cocoa, a little rum flavoring, vanilla, and mix.

    after a few hours…

  • We take the dough and divide it into two equal parts. We roll out the first part and place about half of the prepared cream on top. Add candied fruits to taste

  • we roll it up. We roll out the other part and do the same thing.

  • We bring the two obtained rolls close and braid them. We place it in the loaf pan,

  • cover and let it rise until doubled then brush it with egg yolk and milk. Sprinkle some poppy seeds on top

  • bake at 340°F for about 1 hour.
