Stuffed Mozzarella Baskets

Stuffed Mozzarella Baskets with three different types of fillings. These baskets are really tasty and perfect for an aperitif, appetizer, or buffet.

They are prepared in very little time, just over half an hour, and can be filled as you like. I filled 2 with salad, aurora sauce, and shrimp, another 2 with cherry tomatoes, mozzarella, and squacquerone, and the last 2 with prosciutto, mozzarella balls, and squacquerone, but there are a thousand possible combinations. Some examples: bresaola and goat cheese, arugula and salmon, tuna mousse or ham, Russian salad, or just vegetables and cheese, but I could go on.

Stuffed Mozzarella Baskets

Ingredients

  • 5.3 oz mozzarella (for pizza)
  • 4 tbsp grated Parmesan (or Grana Padano)
  • to taste olive oil (a splash to grease the pan)
  • 2 tbsp shrimp
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup (or less, as preferred)
  • to taste salad
  • 2 tbsp squacquerone
  • 4 cherry tomatoes
  • 4 mozzarella balls
  • 1 drizzle extra virgin olive oil
  • 1 pinch salt
  • 2 tbsp squacquerone
  • 1 slice prosciutto
  • 4 mozzarella balls

Tools

To make the Stuffed Mozzarella Baskets you will need:

  • 1 Grater
  • 1 Pan
  • 1 Espresso cup
  • 1 Tongs
  • 1 Small bowl

Steps

  • For the preparation of the mozzarella baskets, follow the procedure here.

  • Once the baskets are ready, proceed with the filling.

  • Place the mayonnaise and ketchup in a small bowl and mix well (if you like, add a pinch of chili pepper and 1 teaspoon of cognac). Wash the salad well, pat it dry with a clean dish towel, cut it, and place it inside 2 baskets.

  • Add the shrimp, boil them for a few minutes in boiling water (set aside a few) to the pink sauce and place them inside the baskets with the salad.

  • Clean the cherry tomatoes, cut them in half, let them drain for a few minutes in a colander, and put them in a bowl with a bit of salt and extra virgin olive oil. Let the mozzarella balls drain and cut them into pieces, not too small. Add them to the cherry tomatoes and mix.

  • At this point, place about 1 tablespoon of squacquerone in the remaining baskets, in 2 of these add the cherry tomatoes and mozzarella balls in pieces, and in the other 2 the prosciutto and 2 whole mozzarella balls.
